Both knives came razor sharp out of the box, and the fillet knife glided through a whole salmon with almost no effort. The 8-inch Crixus handled the heavier cuts on a pork shoulder without me having to switch tools, which made the whole prep flow a lot faster.

The fillet knife glides through salmon like butter, and the 8-inch Crixus handles a whole ribeye without needing extra passes. Surprised how well-balanced both feel in hand for the price. Definitely my go-to pair for Sunday meal prep now.

These two have replaced my old carving set entirely. The 8-inch Crixus holds a nice edge through a whole brisket, and the 7-inch fillet flexes just enough to work cleanly around bones without feeling flimsy.
